Sweet and Spicy Coleslaw

Ingredients:

Coleslaw
1/2 head purple cabbage, stalk
removed, halved, sliced thinly
1/4 red onion, sliced thinly

Sweet Jalapeno & Pecan Vinaigrette
1 tablespoon finely chopped spicy sweet jalapeno peppers
1/4 cup pecan halves, toasted
2 tablespoons balsamic vinegar
3 tablespoons apple cider vinegar
3/4 teaspoon lemon juice
1/8 teaspoon celery seed
4 tablespoons granulated sugar
1/8 teaspoon salt
1/8 teaspoon black pepper
3 tablespoons extra virgin olive oil

Directions:

Combine cabbage and onion in a large bowl. Combine all the vinaigrette ingredients except olive oil into a blender.
Blend ingredients for 30 seconds. Remove cap from center of the blender’s lid. With blender on low, drizzle in olive oil until combined. Toss cabbage mixture with vinaigrette. Chill coleslaw in refrigerator for at least 30 minutes and serve. Makes 8 servings.
